Memories of Cooking with Mom (and Tips for Planning the Perfect Fall Picnic)

I remember the days spent in the kitchen with my mom vividly. It was my favorite room in my house where some of my favorite memories were made.
The textures. The smells. The feeling of accomplishment when a decades-old family recipe was assembled to perfection — it was absolute joy.
The kitchen was the hub of my family’s home, and it remained that way long after I moved out to attend college and then to Washington, DC for my first job. My mom and I poured a lot of love into the food we served those who visited and there was certainly never a shortage of it.
I spent my early childhood on the Eastern Shore of Maine and the majority of my adult years in Kentucky. Meals cooked and consumed often varied between seafood and savory soul food — but it was the best of both worlds.
Fish chowder, fried clams, and seafood pasta headlined in the winter while southern goulash and homemade apple pie filled the table during summers.
A signature item that could always be found amidst a spread at any meal were biscuits. Warm, flaky, and filled with creamy cheese, smoked meats, and buttery jams, they brought comfort and contentment.
After moving away, I still craved the taste of my mom’s buttermilk biscuits no matter were I was. During Easter weekend of 2015, I was in Charleston, South Carolina hundreds of miles from family and in search of any remnant of home. This was when I first discovered Callie’s Hot Little Biscuit.

The Picnic Spread

- Keep it simple. Pick foods that are easy to bake, easy to pack, and wont get soggy (like biscuits!)
- Lay it Out. Lay out everything you are going to use the night before. Make a checklist of what you will use from the tablecloth to the food containers. When packing, place the heaviest items on the bottom of the basket and the fragile items on the top.
- Finger or Fork Food. Pack food that requires little additional hands-on action at the picnic (Callie’s pre-boxed meals are perfect for this!). Crackers and pre-made dips like pimento cheese and my mom’s southern chicken salad recipe are great options.
- Reuse, don’t Dispose. For a prettier and more earth-friendly spread, use re-usable plates, cloths, and utensils for decor and spills.
- Don’t Forget the Drinks. Whip up a large thermos or two of iced tea or lemonade so it stays cold. This will save space in your basket and keep your liquids cold for the duration of your picnic.
- Pick a shady spot near a body of water or in your favorite national park.
- Plan the picnic closer to sunset and watch as the sky turns vibrant hues.
- Bring a small bouquet of fresh flowers to place among the setting.
