What do sushi rolls and burritos have in common? Well, not much in terms of content. But when creating one of D.C.’s newest foodie havens, the minds behind the funky-fast, casual eatery Buredo got everything right when they combined the best of both.
Buredo (pronounced “bur-EE-do” and Japanese for “blade”) was founded by two life-long childhood friends and DC natives who wanted to satisfy foodies who harbor a specific appreciation and hunger for clean eating with a twist. And when we say satisfy, we mean it – Buredo makes 400-500 jumbo sushi rolls for customers every day.
Using seasoned rice and traditional nori, each roll is made fresh to order in a cafeteria-style assembly line by trained sushi-chefs. Rolled in fresh seaweed, the chefs use both internationally and locally inspired ingredients that contain no artificial dyes or flavors. And don’t worry, these jumbo rolls may seem overwhelming to the naked eye, but not to the waistline – the owners specifically kept the health conscious D.C. crowd in mind when crafting the menu.
Veggies, fresh fish, and unique and creamy sauces play a starring role in each hearty, jam-packed roll. Some of the unique rolls featured on the menu:
– the “Hanzo” which includes yellowfin tuna sashimi, avocado, cucumber, pickled fennel, arugula, tempura crunch, and lemon aioli;
– the “Crazy 88”, which includes a spicy slow cooked pork shoulder, carrot, kimchi slaw, red onion, cucumber, corn, jalapeno, and baja sauce;
– the “Sofie” (pictured below), which includes fried shrimp tempura, avocado, pickled cabbage, carrot, toasted sesame seeds, red tobiko, and sriracha mayo;
– and Buredo’s most popular roll, the “Beatrix” which includes umami, yellowfin tuna and salmon sashimi, cucumber, pickled cabbage, green onion, tempura crunch, and unagi sauce.
Buredo’s newest and most unique specialty is a the “Tanaka” – a jumbo sushi roll starring apple-broccoli-broccoleaf juice pulp from none other than another ECC favorite, JRINK Juicery.
This vegan roll is stuffed with shredded carrot, shredded raw butternut squash, avocado, edamame, wasabi pea crunch, and a sweet and spicy sauce that almost resembles cheddar cheese (but tastes even better!) The pulp that makes this beauty is delivered fresh from JRINK each day, but don’t take this for granted – when the mix is gone, it’s gone. (And by the size of the line out the door when we visited, it goes fast!)
If you have a rather large appetite and the sushi rolls are just the tip of the iceberg, Buredo offers numerous other items on its menu. We recommend a bowl of the Miso Soup, a bag (or two) of Rice Crisp chips, or an Orange Ginger cookie.
And don’t skimp on the beverage to wash all of this yumminess down (we highly recommend the citrusy and tart basil lemonade, pictured below).
Currently, the only spot you can get your hands on one of these bad boys is at Franklin Square across the street from the McPherson Square metro stop. Because of the joint’s popularity, owners are planning to open up another shop in the heart of Dupont where the old Pinkberry frozen yogurt store used to be this summer (can we get an Amen?)
So if the usual (kind of boring now that we think about it) sushi rolls you get at your favorite Japanese joint just aren’t doing it for you anymore, make sure you fit a Buredo visit into your busy work-week lunch schedule – you won’t regret it.
